Cake pop – a fun addition to any party!

Yell “cake pop!” and both kids and adults turn heads. They are cute and fairly mess free. Another added benefit: they’re bit size so you aren’t filled with guilt. . . that is if you can stop at just one. 😉

Turns out, they are pretty darn simple to assemble, and can be made a day or two in advance for easy preparation. Actually, making them in advance is the key to their success. They’ve got to cool and harden. This leaves much less mess when you have kids with sticky warm fingers grabbing at them. #Truth

These could really not be more simple. It does take a hot minute to figure out how to dip the dang things without them falling off, but I’ve got a few tips for you. First though, the recipes:

Cookie Dough

Ingredients
  

  • 1/2 cup butter
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 2 Tbsp whole milk or cream
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips

Instructions
 

  • Mix together sugars and butter, add in milk and vanilla. Stir dry ingredients together in large bowl and slowly incorporate into butter mixture. Fold in chocolate chips. Place in refrigerator for an hour to firm up for cake pops.

I made cookie dough cake pops because Tyrion loves the cookie dough ones from Starbucks, and I made Evelyn the birthday cake kind because that’s her favorite. The birthday cake ones are also super easy to prepare.

Birthday Cake Pop

A perfect cake pop recipe for a great white cake based pop. 
Prep Time 10 minutes
Cook Time 20 minutes
refrigerate 1 hour
Total Time 30 minutes
Servings 20 pops

Ingredients
  

  • 1 box white cake mix make and bake according to box instructions
  • 1 cup frosting

Instructions
 

  • Let cake cool, then crumble into small pieces and place in bowl. Add cup of frosting and mix until incorporated. Place in ball in refrigerator for one hour to firm up for cake pops.

I used my go-to classic buttercream frosting, which you can find here, but you could also use store bought if you’d like.

About 10 minutes before you are ready to coat the cake pops go ahead and begin melting the chocolate chips.

MELTING the cake pop CHOCOLATE

Place the chocolate in a glass bowl. I used about two cups of chocolate chips at a time. Start by microwaving the chocolate for 30 seconds. Stir, then microwave for another 30 seconds. Do this until all chocolate is melted. Don’t over melt chocolate or it doesn’t harden right. I did this the first time and it took 3+ hours for the chocolate to firm up on the pops. Once chocolate is melted you can remove fillings from fridge.

Roll fillings into small balls. I used this cookie scoop to get them all the same size. To help keep the pops on the sticks, first dip 1/2″ of the stick into the melted chocolate and insert into the filling ball. This acts as glue once it’s hardened to keep the pop in place. I did this first to several of the pops, then placed them in a quart size mason jar and let them all sit in the fridge for 10 minutes to allow the chocolate to harden before dipping them.

Dipping cake pops

Once removed from the fridge, take one cake pop at a time and hold over melted chocolate. Gently spoon chocolate over pop while rolling pop in a circular motion to get the chocolate around the whole thing. Then go back with the spoon and “frost” chocolate until no filling shows. Gently tap stick against chocolate bowl to remove any excess. Wipe away drips with spoon and gently set upright to dry.

I set mine in a cake cooling rack raised by cans on all four sides! Improvising is my middle name. While chocolate is still wet sprinkle decorations of your choice on top!

ladies and gentlemen, that is it! I put mine in the fridge to store and they were ready to go for our special day!

    Seriously so very easy but also have a big wow factor for friends, family, and guests at any gathering!
