Nostalgic Homemade Baked Cinnamon Sugar Tortilla Chips
When I was little, my grandparents would take my sister and me to a tiny Mexican restaurant tucked into a quiet corner of our town. The food was wonderful, but what we really looked forward to came at the end: a single, giant cinnamon sugar tortilla chip with a dollop of whipped cream, served on its own plate like a tiny celebration. It was simple, sweet, and one of the most memorable treats from my childhood. These cinnamon sugar tortilla chips are inspired by that dessert and are now a favorite way to use leftover flour tortillas, whether they’re homemade, store-bought, or even our chewy sourdough discard flatbread.

We often make a second batch of our flatbread just to turn it into these crunchy chips the next day. But if time is short or you have a package of tortillas in the pantry, those work just as well. No matter the base, with a little butter and a sprinkle of cinnamon sugar, you’ve got a sweet snack that’s perfect for dipping in fruit salsa, topping with vanilla ice cream, or serving alongside dessert nachos.

While You’ll Love This Recipe
These cinnamon sugar chips bake up crispy and golden brown in under 15 minutes.
They use simple ingredients you likely already have on hand and come together quickly on a baking sheet or cookie sheet.
You can even toss a batch into the air fryer if you’re short on time.
They’re an easy recipe for using up extra tortillas and make a fun treat for after-school snacking, summer parties, or when you just want something sweet but not fussy.
Pair them with a creamy dip, fruit dip, or even chocolate sauce for a tasty treat everyone loves.

Ingredients and Tools
- flour tortillas (store-bought, your favorite homemade version, or leftover sourdough flatbread)
- Melted butter (Have you made butter yet?)
- Sugar
- Cinnamon

You’ll also need a pastry brush, parchment paper, a pizza cutter or large knife for slicing tortilla pieces, and a baking sheet.
If using flatbread, make sure it’s rolled a bit thinner before baking so it crisps up well. You can find the full flatbread recipe here: Chewy Sourdough Discard Flatbread You’ll Make on Repeat

Serving Suggestions
We love serving these with fresh fruit salsa or a light fruit dip. They’re also wonderful crumbled over churned ice cream or dipped into hot fudge or caramel sauce. For something a little extra, you can drizzle chocolate syrup on top and add a handful of fresh strawberries.
If you’re building a sweet snack board or looking for a quick snack for the kids after school, these cinnamon sugar chips are always a hit. They also make a fun topping for creamy dip desserts or even cinnamon toast-style parfaits layered with yogurt and fruit.

Storage Tips for these Cinnamon Sugar Tortilla Chips
Once completely cooled, store your homemade chips in an airtight container at room temperature for up to 4 days. If they begin to soften, a few minutes in the oven at 300°F on a cookie sheet will help crisp them right back up. These chips don’t love humidity, so be sure they’re completely dry before sealing them away.

Final Thoughts from the Homestead
Last night, I pulled a second batch of sourdough flatbread dough from the fridge and baked up a tray of these sweet chips just before the kids got home. They were gone before dinner was even on the table. I love that something as humble as leftover tortillas can become a great snack or delicious dessert with just a few pantry staples. Whether you’re using your own flatbread dough, a package of tortillas, or something in between, these cinnamon-sugar chips are proof that the best treats are often the simplest.
