When I was little, my grandparents would take my sister and me to a tiny Mexican restaurant tucked into a quiet corner of our town. The food was wonderful, but what we really looked forward to came at the end: a single, giant cinnamon sugar tortilla chip with a dollop of whipped cream, served on its own plate like a tiny celebration. It was simple, sweet, and one of the most memorable treats from my childhood. These cinnamon sugar tortilla chips are inspired by that dessert and are now a favorite way to use leftover flour tortillas, whether they’re homemade, store-bought, or even our chewy sourdough discard flatbread.

We often make a second batch of our flatbread just to turn it into these crunchy chips the next day. But if time is short or you have a package of tortillas in the pantry, those work just as well. No matter the base, with a little butter and a sprinkle of cinnamon sugar, you’ve got a sweet snack that’s perfect for dipping in fruit salsa, topping with vanilla ice cream, or serving alongside dessert nachos.

Ingredients and Tools

You’ll also need a pastry brush, parchment paper, a pizza cutter or large knife for slicing tortilla pieces, and a baking sheet.

Cinnamon Sugar Tortilla Chips

Ingredients
  

  • 6 flour tortillas
  • 3 tbsp melted butter
  • ¼ cup sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 350°F.
  • Slice flatbread into tortilla wedges or tortilla pieces.
  • Brush both sides with melted butter using a pastry brush.
  • Mix sugar and teaspoon cinnamon in a small bowl, then sprinkle on both sides.
  • Lay in a single layer on a baking sheet or cookie sheet lined with parchment paper.
  • Bake 4–6 minutes, flipping once, until golden brown and crisp.
  • Cool completely—they’ll crisp as they cool!

Notes

These can also be made in the air fryer. Just layer the chips in a single layer in the basket and cook at 350°F for about 5 minutes, checking frequently to avoid overbrowning.

Storage Tips for these Cinnamon Sugar Tortilla Chips

Once completely cooled, store your homemade chips in an airtight container at room temperature for up to 4 days. If they begin to soften, a few minutes in the oven at 300°F on a cookie sheet will help crisp them right back up. These chips don’t love humidity, so be sure they’re completely dry before sealing them away.

Last night, I pulled a second batch of sourdough flatbread dough from the fridge and baked up a tray of these sweet chips just before the kids got home.
