Slice flatbread into tortilla wedges or tortilla pieces.
Brush both sides with melted butter using a pastry brush.
Mix sugar and teaspoon cinnamon in a small bowl, then sprinkle on both sides.
Lay in a single layer on a baking sheet or cookie sheet lined with parchment paper.
Bake 4–6 minutes, flipping once, until golden brown and crisp.
Cool completely—they’ll crisp as they cool!

These can also be made in the air fryer. Just layer the chips in a single layer in the basket and cook at 350°F for about 5 minutes, checking frequently to avoid overbrowning.
